Ingredients:
- 2 boneless chicken breasts
- Salt and pepper to taste
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 cup of heavy cream
- 2 cups of grated Parmesan
- 300g of Fettuccine pasta
- 2 tablespoons of chopped fresh parsley
Instructions:
-
Start by seasoning the chicken breasts with salt and pepper on both sides. Heat one tablespoon of olive oil in a pan over medium heat and add the chicken. Cook until it’s browned on the sides and cooked through, then remove and slice it up.
-
In the same pan, add the remaining olive oil and sauté minced garlic until it becomes fragrant.
-
Now, add the heavy cream, reduce the heat, and let it simmer for 4-5 minutes. Stir occasionally until the cream reduces slightly.
-
Add the grated parmesan to the reduced cream mixture. Continue stirring until the cheese melts completely and the sauce starts to thicken.
-
While your sauce is getting creamy, boil your pasta as per the instructions on the packet. When fully cooked, drain the pasta and add it to the pan with Alfredo sauce.
-
Toss to make sure that the pasta is fully coated with the rich and creamy Alfredo sauce. Add the cooked chicken slices to the same pan and toss again.
-
Top your pasta with chopped fresh parsley, some more parmesan, and serve hot!
