Ingredients:
For the Meat Sauce:
– 1 tbsp olive oil
– 1 onion, finely chopped
– 2 garlic cloves, minced
– 1 lb lean ground beef
– 1 can (15 oz) tomato sauce
– 1 can (6 oz) tomato paste
– 1 can (14.5 oz) diced tomatoes
– 2 tsp dried basil leaves
– 1 tsp salt
For the Cheese Mixture:
– 2 eggs
– 1 container (15 oz) ricotta or cottage cheese
– 3/4 cup grated parmesan cheese
– 1 tbsp chopped fresh or 1 teaspoon dried parsley leaves
– 1/2 tsp dried oregano leaves
– 1/2 tsp salt
– 2 cups shredded mozzarella cheese
And:
– 9 lasagna noodles, cooked and drained

In a large skillet, heat the oil over medium heat. Add the onion and garlic and cook until they’re soft. Add the ground beef and cook until browned, then drain any excess fat.

Stir in the tomato sauce, tomato paste, diced tomatoes, basil, and 1 teaspoon salt. Bring the mixture to a simmer, reduce the heat to low, cover, and let it cook for an hour, stirring occasionally.

To assemble, spoon one-fourth of the meat sauce into an ungreased 13×9 inch baking dish. Repeat with the remaining noodles, cheese mixture, mozzarella, and meat sauce.
