The Perfect Sunday Roast Chicken

Roast Chicken

There’s no better comfort food than a classic Sunday roast chicken. With its golden, crispy skin, tender, juicy meat, and the familiar aroma that fills the house, it’s the perfect meal to gather the family around the table. Whether it’s a lazy Sunday afternoon or a fun-filled family gathering, this simple recipe is your key to cooking a roast chicken that’ll have everyone asking for more.

Ingredients:

  • 1 whole chicken (around 1.5kg)
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 lemon, halved
  • 3 sprigs of fresh rosemary
  • 3 sprigs of fresh thyme
  • 1 whole garlic clove, halved

Instructions:

  1. Preheat your oven to 200ºC (390ºF). While your oven is heating, remove any giblets from the chicken and rinse with cold water. Pat dry with paper towels.

  2. Rub the chicken all over with olive oil, then season generously with salt and pepper.

  3. Place lemon halves, sprigs of rosemary, thyme and the halved garlic into the chicken cavity. This will infuse the chicken with a delicious aromatic flavor.

  4. Place the seasoned chicken in a roasting pan and tie the drumsticks together using a kitchen string.

  5. Roast in the oven for approximately 1.5 hours, or until the juices run clear when you cut between the leg and the thigh. Baste the chicken with its juices now and then.

  6. Once your chicken is cooked to perfection, remove from the oven and cover with foil. Let it rest for at least 15 minutes before carving. This helps the chicken retain its juices, making it even more tender and flavorful.

Serve the roast chicken with your favorite side dishes. We like it with a warm bread roll, a fresh salad, or a creamy mashed potato.

Enjoy the familiar comfort of this roast chicken recipe that brings the family together not just in eating, but also in preparation. Always remember, the key to a great roast is to keep it simple, giving the spotlight to the natural flavors of the chicken.

Happy cooking and enjoy your Perfect Sunday!
