Ingredients:
1. 200 grams of Spaghetti
2. 150 grams of pancetta or guanciale (Italian pork cheek)
3. 3 large eggs at room temperature
4. 2 egg yolks at room temperature
5. 75 grams of Pecorino Romano cheese, grated
6. 75 grams of Parmigiano Reggiano cheese, grated
7. Freshly ground black pepper and salt
8. A splash of olive oil

Instructions:
1. Boil the spaghetti in a large pot of salted water until it is al dente. While the spaghetti is boiling, you can start preparing the carbonara sauce.
2. In a large, deep frying pan, add a drizzle of olive oil and fry the pancetta on medium heat until it’s crispy. Once done, remove the pan from the heat.

7. If needed, loosen the pasta with the reserved pasta water.
8. Adjust salt and add more pepper if required.
