Quinoa Stir-fry Recipe:
Ingredients:
– 1 cup cooked quinoa
– 1 bell pepper, cut into strips
– 1 medium-sized carrot, julienned
– A handful of baby corn
– A handful of snap peas
– 1 small red onion, thinly sliced
– 2-3 cloves garlic, minced
– 2 tbsp olive oil
– 2 tbsp soy sauce
– 1 tbsp sriracha sauce (optional)
– Salt and black pepper to taste
Instructions:
1. Start by cooking quinoa as per packet instructions. Generally, it’s a 2:1 ratio of water to quinoa.
2. In a large wok or pan, heat up the olive oil and sauté the garlic and onion until slightly caramelised.
3. Add bell pepper, carrot, baby corn, and snap peas to the wok. Stir-fry until vegetables are crisp-tender, approximately 5 minutes.
4. Transfer the cooked quinoa to the wok, and stir well to combine.
5. Pour in soy sauce, sriracha sauce, salt, and pepper. Stir-fry for another couple of minutes until all ingredients are well mixed and coated with the sauces.
6. Remove from heat, and serve hot.
