Hearty & Healthy Quinoa Salad: Burst of Flavors!

Today, we are sharing a favorite of ours: a hearty, delicious, and healthy Quinoa Salad. Vibrant, packed with textures and flavors, this exquisite salad is perfect for anybody looking to switch up their meal routine.

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1/4 cup extra-virgin olive oil
  • 2 limes, juiced
  • 2 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp red pepper flakes (optional)
  • 1 1/2 cups halved cherry tomatoes
  • 1 cucumber, diced
  • 5 green onions, finely chopped
  • 1/4 cup chopped fresh cilantro
  • 1 diced red bell pepper
  • 1 cup canned black beans, drained and rinsed
  • 1/2 cup crumbled feta cheese

Instructions:

  1. Rinse the quinoa before cooking to remove the natural coating, saponin, which can taste bitter.
  2. Put quinoa and water in a pot. Bring it to boil, then reduce the heat to low, cover and simmer until quinoa is tender and water has been absorbed (around 15 minutes). Set it aside to cool.
  3. In a large bowl, whisk together olive oil, lime juice, cumin, salt, and red pepper flakes (if you like a kick of heat).
  4. In the same bowl, stir in halved cherry tomatoes, diced cucumber, finely chopped green onions, chopped fresh cilantro, diced red bell pepper, and canned black beans that are drained and rinsed.
  5. Pour the cooled quinoa into the bowl with the other ingredients. Mix well.
  6. Lastly, sprinkle the salad with crumbled feta cheese for a final touch of creaminess.
