Today, I want to share a hearty, cosy recipe that’s perfect for those chilly winter days – the Classic Shepherd’s Pie. It’s a traditional British dish, loaded with juicy minced lamb and a medley of vegetables, all topped with a creamy layer of mashed potatoes. Let’s dive into it!

Ingredients:

For the lamb filling:
– 500g minced lamb
– 1 onion, finely chopped
– 2 carrots, chopped
– 2 cloves garlic, minced
– 1 cup of peas
– 2 tablespoons tomato paste
– 1 cup beef or lamb broth
– 1 teaspoon dried rosemary
– 1 teaspoon dried thyme
– Salt and pepper to taste

For the mashed potato topping:
– 4 large potatoes, peeled and cut into 1-inch pieces
– 1/2 cup milk or cream
– 2 tablespoons butter
– Grated cheddar cheese for topping
– Salt and pepper to taste

Instructions:

  1. Preheat your oven to 200C (400F).
  2. Begin by preparing the filling. Heat a large skillet over medium heat, add the lamb mince and cook until browned. Drain the fat, then add the onion, carrots, and garlic, cooking until softened.
  3. Stir in the peas, tomato paste, broth, rosemary, thyme, salt, and pepper. Let simmer while you prepare the potatoes.
  4. For the mashed potatoes, boil the cut potatoes in salted water until tender. Drain well and return to the pot.
  5. Add the milk, butter, salt, and pepper, then mash until smooth and creamy.
  6. Transfer the lamb filling to a casserole dish. Spread the mashed potatoes over the top, smoothing with a spoon. Sprinkle the grated cheddar cheese over the potatoes.
  7. Bake for about 25-30 minutes, or until the potatoes are golden. Allow the pie to cool a little before serving.
