Today, I want to share a hearty, cosy recipe that’s perfect for those chilly winter days – the Classic Shepherd’s Pie. It’s a traditional British dish, loaded with juicy minced lamb and a medley of vegetables, all topped with a creamy layer of mashed potatoes. Let’s dive into it!
Ingredients:
For the lamb filling:
– 500g minced lamb
– 1 onion, finely chopped
– 2 carrots, chopped
– 2 cloves garlic, minced
– 1 cup of peas
– 2 tablespoons tomato paste
– 1 cup beef or lamb broth
– 1 teaspoon dried rosemary
– 1 teaspoon dried thyme
– Salt and pepper to taste
For the mashed potato topping:
– 4 large potatoes, peeled and cut into 1-inch pieces
– 1/2 cup milk or cream
– 2 tablespoons butter
– Grated cheddar cheese for topping
– Salt and pepper to taste
Instructions:
- Preheat your oven to 200C (400F).
- Begin by preparing the filling. Heat a large skillet over medium heat, add the lamb mince and cook until browned. Drain the fat, then add the onion, carrots, and garlic, cooking until softened.
- Stir in the peas, tomato paste, broth, rosemary, thyme, salt, and pepper. Let simmer while you prepare the potatoes.
- For the mashed potatoes, boil the cut potatoes in salted water until tender. Drain well and return to the pot.
- Add the milk, butter, salt, and pepper, then mash until smooth and creamy.
- Transfer the lamb filling to a casserole dish. Spread the mashed potatoes over the top, smoothing with a spoon. Sprinkle the grated cheddar cheese over the potatoes.
- Bake for about 25-30 minutes, or until the potatoes are golden. Allow the pie to cool a little before serving.
