Ingredients:
- 2 boneless chicken breasts
- 1 egg
- 1 cup of Panko bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 cup all-purpose flour
- Olive oil, for frying
- 2 cups of marinara sauce
- 1 cup shredded mozzarella
- Salt and fresh ground pepper to taste
- Freshly chopped basil, for garnish

Preheat your oven to 200°C (400°F) and prepare a baking sheet by covering it with a layer of foil.

Flatten the chicken breasts tenderly using a meat mallet, and season both sides with salt and pepper.

Start a 3-part breading procedure: Beat the egg in one bowl, put the flour in a second bowl, and mix the bread crumbs and Parmesan cheese in a third bowl. Dip each chicken piece into flour, then egg, and finally the breadcrumb mixture.
