Ingredients:

For the Red Velvet
– 2 1/2 cups all-purpose flour
– 1 1/2 cups sugar
– 1 tsp baking soda
– 1 tsp salt
– 1 tsp cocoa powder
– 1 1/2 cups vegetable oil
– 1 cup buttermilk, room temperature
– 2 large eggs, room temperature
– 2 tbsp red food coloring
– 1 tsp white distilled vinegar
– 1 tsp vanilla extract

For the Cheesecake
– 3 8-oz packs cream cheese
– 1 1/4 cups sugar
– 1/4 cup cornstarch
– 1/2 cup sour cream
– 2 large eggs
– 1 tsp vanilla extract

Instructions:

Red Velvet Cake
1. Preheat your oven to 350 degrees. Grease and flour three 9-inch cake pans.
2. In a mixing bowl, combine all the dry ingredients including the sugar.
3. In a separate bowl, combine all wet ingredients including eggs.
4. Add the wet ingredients into the dry ingredient mixture, mixing until smooth and creamy.
5. Divide the batter evenly among the cake pans and bake for 20-30 mins.

Cheesecake
1. In a large bowl, beat the cream cheese until it’s light and fluffy.
2. Add sugar and cornstarch, continuing to beat until well-combined.
3. Beat in sour cream, then the eggs, one at a time and beating well after each addition.
4. Finish with the vanilla extract and blend well.
5. Pour the cheesecake mixture over one layer of red velvet cake in the cake pan, and bake in water bath at 325F for 40-60 mins.

Let both cakes cool completely (refrigerate the cheesecake overnight). Stack the red velvet layers with the cheesecake layer in the middle. Finish off with cream cheese frosting, if you like, or dusted powdered sugar on top.
