Ingredients:

  • 1 whole chicken (about 1.5 kg)
  • 2 onions, chopped
  • 4 carrots, sliced into chunks
  • 3 celery stalks, chopped
  • 3 cloves of garlic, minced
  • Fresh herbs (parsley, thyme, bay leaves)
  • Salt and pepper to taste

Instructions:

  1. Clean your chicken. Remove giblets and rinse the whole chicken under cold water.

  2. Put the chicken in a large pot and cover it with cold water (about 1 inch above the chicken).

  3. Bring the water to a simmer over medium-high heat. Once the water is simmering, reduce the heat to low and cover the pot. Let it gently simmer for about 1 hour.

  4. Skim off any foam or fat that floats to the top.

  5. Add the chopped onions, carrots, celery, and minced garlic to the pot. Stir in the fresh herbs, salt, and pepper.

  6. Cover the pot and simmer for another 2 hours.

  7. Remove the chicken from the pot and let it cool. Once it’s cool enough to handle, remove the meat from the bones.

  8. Strain the broth through a fine-mesh strainer. Discard the solids.

  9. Return the broth and the chicken meat back to the pot. Adjust the seasoning if needed.

  10. You can serve it immediately, or let it cool and refrigerate it for later use.
