Ingredients:

  • 2 boneless chicken breasts
  • 1 egg
  • 1 cup of Panko bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 cup all-purpose flour
  • Olive oil, for frying
  • 2 cups of marinara sauce
  • 1 cup shredded mozzarella
  • Salt and fresh ground pepper to taste
  • Freshly chopped basil, for garnish

Instructions:

  1. Preheat your oven to 200°C (400°F) and prepare a baking sheet by covering it with a layer of foil.

  2. Flatten the chicken breasts tenderly using a meat mallet, and season both sides with salt and pepper.

  3. Start a 3-part breading procedure: Beat the egg in one bowl, put the flour in a second bowl, and mix the bread crumbs and Parmesan cheese in a third bowl. Dip each chicken piece into flour, then egg, and finally the breadcrumb mixture.

  4. In a large pan, heat a thin layer of olive oil over medium-high heat. Add the breaded chicken to the pan and cook for 4-5 minutes on each side, until golden brown and crispy.

  5. Remove from the pan and place the chicken on the prepared baking sheet. Top each piece with a scoop of marinara sauce and sprinkle with shredded mozzarella.

  6. Bake in the oven for 15-20 minutes, until the cheese is melted and bubbly. Top with freshly chopped basil before serving.

Enjoy this crispy chicken parmesan paired with a side salad or spaghetti for a delightful and satisfying meal. Not only is it uncomplicated, this classic Italian dish will transport you straight to the sunny Mediterranean with every mouthful!
