Ingredients:

  • 1.5 lbs Boneless Chicken Breast
  • 3 Bell Peppers, sliced (preferably different colors for a vibrant meal)
  • 1 Large Onion, sliced
  • 2 tbsp Olive Oil
  • 2 tsp Chili Powder
  • 1 tsp Ground Cumin
  • 1 tsp Garlic Powder
  • 1/2 tsp Paprika
  • Salt & Pepper to taste
  • 8-10 Fajita-sized Flour Tortillas
  • Lime wedges, Salsa, Sour cream, and Fresh Cilantro (optional for serving)

Procedure:

  1. Preheat your oven to 400°F (200°C). Meanwhile, line a baking sheet with foil for easy cleanup.

  2. Arrange the sliced bell peppers and onion on the baking sheet.

  3. Slice the chicken into thin strips and place them with the veggies on the sheet.

  4. In a small bowl, mix together the olive oil, chili powder, ground cumin, garlic powder, paprika, salt, and pepper.

  5. Drizzle the spice mixture over the chicken and veggies, and toss everything until they’re well coated.
