Ingredients:
- 1 whole chicken (about 1.5 kg)
- 2 onions, chopped
- 4 carrots, sliced into chunks
- 3 celery stalks, chopped
- 3 cloves of garlic, minced
- Fresh herbs (parsley, thyme, bay leaves)
- Salt and pepper to taste
Instructions:

Clean your chicken. Remove giblets and rinse the whole chicken under cold water.

Put the chicken in a large pot and cover it with cold water (about 1 inch above the chicken).

Bring the water to a simmer over medium-high heat. Once the water is simmering, reduce the heat to low and cover the pot. Let it gently simmer for about 1 hour.
