Ingredients:
1) 1 cup of green lentils
2) 1 large onion, chopped

7) 2 cups of diced tomatoes
8) 6 cups of vegetable broth

Instructions:
1) Rinse your lentils: This is to ensure that any dirt or small stones that may have come with the lentils are removed.
2) In a large pot over medium heat, add the vegetable oil, onions, garlic, and carrots. Sauté the mixture until the onions become translucent which usually takes about 5-7 minutes.
3) Add the lentils, cumin, tomatoes, and vegetable broth to the pot. Bring the mixture to a boil before reducing the heat. Let it simmer until the lentils are tender, which should take about 40-45 minutes.
4) Use your salt and pepper to add flavor to taste.
5) Once your lentils are cooked and your soup has achieved a hearty texture, remove it from the heat.
6) Serve in bowls and garnish with the fresh parsley or cilantro as preferred.
Pair this soup with a slice of crusty bread, a green salad, or any accompaniment of your choice. The leftovers will last in the refrigerator for up to a week and can also be frozen for longer storage. This is an easy, invigorating meal that should definitely be in your recipe rotation.
