Ingredients:

-150g Pancetta or Guanciale (Italian cured pork cheek)
-4 large Egg Yolks
-50g Pecorino Cheese, finely grated
-50g Parmesan Cheese, finely grated
-Salt and Black Pepper to taste
Instructions:

Cook the spaghetti in a pot of boiling salted water till al dente (tender but still firm to the bite). Make sure to save some pasta water for later.

In a separate pan over medium heat, add your diced pancetta (or guanciale). Cook until crispy and let the fat render. Let it rest off the heat.

In a bowl, mix the egg yolks, pecorino, and parmesan cheese. Add a good pinch of black pepper.

Once the pasta is cooked, drain it quickly reserving some pasta water. While the pasta is still piping hot, add it to the pan with pancetta.

Now, be quick adding the egg and cheese mixture to the pasta, and toss everything together. The heat from the pasta will cook the egg slightly and melt the cheese, creating a creamy and rich sauce. If too thick, add some more pasta water.

Voila! Your Spaghetti Carbonara is ready. Serve it warm topped with a sprinkle of parmesan and eat immediately for the best taste.
Remember, the real Italian Carbonara has no cream. The lush creaminess of Carbonara is made purely with eggs, cheese, pasta water, and black pepper!
