Panna Cotta, Italian for “cooked cream,” is a delightfully smooth dessert hailing from Italy’s Piedmont region. This dish involves creamy gelatin, flavored and set in a mold to create a perfect, quivering finish. Today we’re adding a fruity twist with sweet, seasonal strawberries!

Ingredients:

  • 2 cups heavy cream
  • 1/4 cup sugar
  • 1 vanilla bean, split and seeds removed
  • 1 pack gelatin
  • 4 tablespoons water
  • 2 cups fresh strawberries
  • 1/2 cup sugar (for the sauce)
  • Fresh strawberries and mint leaves for garnish

Instructions:

  1. In a heavy-bottomed saucepan, combine heavy cream, sugar, and vanilla seeds. Simmer at medium heat until sugar completely dissolves, about 4-5 minutes.
  2. Soften gelatin in cold water & add it to the warm cream mixture off the heat. Stir until the gelatin has completely dissolved.
  3. Pour the mixture into four ramekins. Once they’ve reached room temperature, cover and refrigerate them for at least 4 hours or overnight.
  4. For the strawberry sauce, combine the strawberries and sugar in a blender until smooth. Strain to discard seeds and set aside in the refrigerator.
  5. When serving, dip ramekins in hot water for about ten seconds and then invert onto a serving dish. Top with strawberry sauce, fresh strawberries, and a sprig of mint.
