Panna Cotta, Italian for “cooked cream,” is a delightfully smooth dessert hailing from Italy’s Piedmont region. This dish involves creamy gelatin, flavored and set in a mold to create a perfect, quivering finish. Today we’re adding a fruity twist with sweet, seasonal strawberries!
Ingredients:
- 2 cups heavy cream
- 1/4 cup sugar
- 1 vanilla bean, split and seeds removed
- 1 pack gelatin
- 4 tablespoons water
- 2 cups fresh strawberries
- 1/2 cup sugar (for the sauce)
- Fresh strawberries and mint leaves for garnish
Instructions:
- In a heavy-bottomed saucepan, combine heavy cream, sugar, and vanilla seeds. Simmer at medium heat until sugar completely dissolves, about 4-5 minutes.
- Soften gelatin in cold water & add it to the warm cream mixture off the heat. Stir until the gelatin has completely dissolved.
- Pour the mixture into four ramekins. Once they’ve reached room temperature, cover and refrigerate them for at least 4 hours or overnight.
- For the strawberry sauce, combine the strawberries and sugar in a blender until smooth. Strain to discard seeds and set aside in the refrigerator.
- When serving, dip ramekins in hot water for about ten seconds and then invert onto a serving dish. Top with strawberry sauce, fresh strawberries, and a sprig of mint.
