Here’s how you can prepare this lip-smacking curry at home:

Ingredients:

  1. 1 large onion, finely chopped
  2. 2 cloves of garlic, minced
  3. 1 tablespoon of ginger, grated
  4. 2 medium carrots, diced
  5. 1 bell pepper, chopped
  6. 1 cup of chopped spinach
  7. 2 cans of chickpeas, drained and rinsed
  8. 1 can of coconut milk
  9. 1 tablespoon of curry powder
  10. 1 teaspoon of turmeric
  11. Salt and pepper to taste
  12. 1 tablespoon of olive oil
  13. Freshly chopped cilantro for garnish

Instructions:

  1. Heat the olive oil in a pot on medium heat. Add the onion, garlic, ginger, and sauté until the onions are translucent.

  2. Stir in your spices (curry powder, turmeric, salt, and pepper), allowing them to coat the onion mix well.

  3. Add the carrots and bell pepper to the pot. Stir occasionally, and let the veggies cook for around 10 minutes.
