Start Your Morning Right with a Wholesome Veggie Frittata

There are hardly any dishes that are as versatile, nourishing, and gratifying as a frittata. This tantalizing Italian-style omelet, filled to the brim with a variety of vegetables, will kick-start your day with a burst of vibrant flavors and an overload of nutrition. Plus, it’s super easy to spice up with your favorite herbs and spices!

The highlight of a frittata is its adaptability: you can throw in whatever vegetables are lounging in your fridge. For this recipe, we will use bell peppers, zucchini, and sweet onions, but feel free to replace or add anything you like.

Ingredients:

  • 8 large eggs
  • A splash of milk
  • 1 small red bell pepper, sliced
  • 1 small zucchini, sliced
  • 1 small sweet onion, sliced
  • 1 clove garlic, minced
  • A handful of fresh parsley and basil, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions:

  1. Preheat your oven to 180°C (350°F). Meanwhile, whisk together your eggs, milk, and a pinch of salt and pepper in a bowl. Set aside.
  2. Heat olive oil in an oven-safe skillet over medium heat. Add the onion and sauté until softened and golden. Add the minced garlic and cook for another minute.
  3. Add the slice pepper and zucchini. Sauté until the vegetables soften slightly, making sure to season with a bit more salt and pepper.
  4. Pour the egg mixture over your cooked veggies. Stir slightly to ensure the eggs get distributed evenly. Sprinkle the chopped parsley and basil over the top. Let it cook undisturbed for about 3-4 minutes or until the edges start to pull away from the skillet.
  5. Transfer your skillet to your preheated oven. Let it bake for about 15-20 minutes, or the eggs are set and the top has a lovely golden color.

Your veggie frittata is ready to be served! It can be sliced up and enjoyed warm right out of the oven. Or, if you like, you can let it cool and serve it at room temperature. Either way, it’s a fantastic, protein-rich dish that will keep you and your family satisfied all morning long. Plus, it makes excellent leftovers for lunch or dinner!
