4. 1 tablespoon cornstarch

6. 1 egg, beaten (for egg wash)
7. Raw sugar (for sprinkling)

Procedure:

  1. Begin with the pastry. In a bowl, mix flour, sugar, and salt. Incorporate the cold butter until the mixture looks like coarse crumbs. Slowly add ice water and mix until the dough comes together. If it’s too dry, add a little more water. Shape the dough into a disc, wrap in plastic, and refrigerate for about 30 minutes or until firm.

  2. Preheat your oven to 375F (190C) and line a baking sheet with parchment paper.

  3. While the dough chills, prepare the filling. Mix together strawberries, blueberries, sugar, cornstarch, and lemon zest. Set aside.

  4. Once the dough is ready, roll it out on a floured surface to about a 12-inch circle. Transfer the dough to the prepared baking sheet.

  5. Spread the fruit mixture over the dough, leaving a border of about 2 inches. Fold the edges over, pleating the dough as necessary.

  6. Brush the edges of the dough with the beaten egg and sprinkle with raw sugar.

  7. Bake for about 35-40 minutes or until the crust is golden and the fruit is bubbly. Let it cool before slicing.
