Sweet Delight: Red Velvet Cheesecake Recipe

Ingredients:

For the Crust:
1 1/2 cups of chocolate Graham Cracker crumbs
1/4 cup melted unsalted Butter

For the Cheesecake:
2 (8 ounces) packages of Cream Cheese, softened
1 1/2 cups white Sugar
4 Eggs
1 cup Sour Cream
½ cup Buttermilk
2 tablespoons Cocoa Powder
1 ounce Red Food Coloring
1 teaspoon Vinegar
2 teaspoons Vanilla Extract

For the topping:
1 cup Heavy Cream
2 tablespoons Powdered Sugar
½ teaspoon Vanilla Extract

Instructions:

  1. Preheat your oven to 325F/165C and grease a 9-inch springform pan.
  2. Mix the crust ingredients and press it onto the bottom of the pan. Set aside.
  3. In a large bowl, beat the softened cream cheese until it’s smooth. Gradually add sugar and beat until it becomes fluffy.
  4. Stir in the eggs, one at a time, beating well after each addition. Add in the rest of the cheesecake ingredients and beat until it’s smooth.
  5. Pour batter into the prepared crust and bake for about 60 minutes, or until the center is set and the top looks slightly dry.
  6. Allow it to cool completely before removing the springform pan.
  7. Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread it evenly on top of the cooled cheesecake.
  8. Refrigerate it for at least 4 hours, preferably overnight.
