Ingredients:
For the Crust:
1 1/2 cups of chocolate Graham Cracker crumbs
1/4 cup melted unsalted Butter
For the Cheesecake:
2 (8 ounces) packages of Cream Cheese, softened
1 1/2 cups white Sugar
4 Eggs
1 cup Sour Cream
½ cup Buttermilk
2 tablespoons Cocoa Powder
1 ounce Red Food Coloring
1 teaspoon Vinegar
2 teaspoons Vanilla Extract
For the topping:
1 cup Heavy Cream
2 tablespoons Powdered Sugar
½ teaspoon Vanilla Extract
Instructions:
- Preheat your oven to 325F/165C and grease a 9-inch springform pan.
- Mix the crust ingredients and press it onto the bottom of the pan. Set aside.
- In a large bowl, beat the softened cream cheese until it’s smooth. Gradually add sugar and beat until it becomes fluffy.
- Stir in the eggs, one at a time, beating well after each addition. Add in the rest of the cheesecake ingredients and beat until it’s smooth.
- Pour batter into the prepared crust and bake for about 60 minutes, or until the center is set and the top looks slightly dry.
- Allow it to cool completely before removing the springform pan.
- Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread it evenly on top of the cooled cheesecake.
- Refrigerate it for at least 4 hours, preferably overnight.
