But taking a little time during the weekend to prepare this slow-roasted lemon chicken will keep you yearning for more homemade wonders! This warming recipe pairs citrus-fuelled tangy chicken with a side of sweet potatoes, adding balance to your cheesy comfort food.
Ingredients:
For the chicken:
– 1 whole chicken
– 2 lemons
– 6 cloves garlic
– 2 tbsp olive oil
– Salt and pepper to taste
For the potatoes:
– 4 sweet potatoes
– 2 tbsp olive oil
– Salt and pepper to taste
– 1 tsb paprika
Instructions:
-
Begin by preheating your oven to 180°C.
-
Rinse your chicken under cool water, then pat dry.
-
Cut one of the lemons into slices and the other one in half. Squeeze the juice of one half onto the chicken and place some slices around the chicken.
-
Peel and crush your garlic cloves before massaging onto the chicken along with olive oil. Season with salt and pepper.
-
Put this prepared chicken into a roasting dish and place it in the preheated oven.
-
While the chicken starts roasting, peel and cut your sweet potatoes into cubes. Toss these with olive oil, salt, pepper, and paprika.
-
After the chicken has been roasting for about 30 minutes, add the sweet potatoes to the same roasting dish. Stir them occasionally for an even roast.
-
Roast the chicken and sweet potatoes for about another hour or until they are fully cooked and the chicken’s juices run clear.
-
Once they are all ready, take them out of the oven and let them rest for around 15 minutes.
-
Serve your succulent lemon chicken with those flavourful sweet potatoes on the side.
This recipe serves as a wonderful Sunday meal when you’ve got a little extra time on your hands, and it’s a beautiful blend of tangy, savory, and sweet. Plus, the leftovers make for delicious weekday lunches!
