Tangy Lemon Roasted Chicken with Sweet Potatoes

Ingredients:

For the chicken:
– 1 whole chicken
– 2 lemons
– 6 cloves garlic
– 2 tbsp olive oil
– Salt and pepper to taste

For the potatoes:
– 4 sweet potatoes
– 2 tbsp olive oil
– Salt and pepper to taste
– 1 tsb paprika

Instructions:

  1. Begin by preheating your oven to 180°C.

  2. Rinse your chicken under cool water, then pat dry.

  3. Cut one of the lemons into slices and the other one in half. Squeeze the juice of one half onto the chicken and place some slices around the chicken.

  4. Peel and crush your garlic cloves before massaging onto the chicken along with olive oil. Season with salt and pepper.

  5. Put this prepared chicken into a roasting dish and place it in the preheated oven.

  6. While the chicken starts roasting, peel and cut your sweet potatoes into cubes. Toss these with olive oil, salt, pepper, and paprika.

  7. After the chicken has been roasting for about 30 minutes, add the sweet potatoes to the same roasting dish. Stir them occasionally for an even roast.
