  3. In a separate bowl, mix the egg yolks, add cheese, a significant amount of black pepper. Mix until you get a nice paste texture.

  4. Once the spaghetti is ready, drain it but make sure to RESERVE some pasta water. Add the hot spaghetti to the pan with the guanciale. Toss it well to mix.

  5. Remove the pan from the heat now (this is crucial, as you don’t want the eggs to scramble). Add a tiny bit of the reserved pasta water to the yolk and cheese mixture. Then add it all into the spaghetti and guanciale pan. Stir quickly until it gets a creamy consistency. If required, add additional pasta water.
