Quinoa Salad

Today, I’m going to share a recipe that is not just delicious, but also packed with nutritional goodness – a wholesome Quinoa Salad! Trust me, this recipe will soon become your go-to for either lunch or dinner, so let’s get started.

Ingredients

  • 1 cup Quinoa
  • 2 cups Vegetable Broth or Water
  • 1 cup Cherry Tomatoes (halved)
  • 1 large Cucumber, diced
  • 1/2 Red Onion (chopped)
  • 1 Bell Pepper (any color, diced)
  • 1/2 cup Olives, sliced
  • 1/4 cup Feta Cheese (optional)
  • 1 tbsp Olive Oil
  • 1 Lemon, juiced
  • Salt and Pepper to taste

Instructions

  1. Rinse the quinoa under running water thoroughly before cooking.
  2. In a small saucepan, bring 2 cups of vegetable broth or water to a boil.
  3. Add the rinsed quinoa into the boiling broth, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until quinoa absorbs all the liquid and appears fluffy.
  4. Once the quinoa is cooked, transfer it to a large serving bowl and let it cool for a bit.
  5. While the quinoa is cooling, prepare the vegetables. A combination of cherry tomatoes, cucumber, red onion, bell pepper, and olives adds a color explosion as well as a variety of textures and flavors to the salad. Add them to the cooked quinoa.
  6. Top it off with feta cheese. This is totally optional but recommended, as it adds a tangy flavor that goes well with the salad.
  7. And finally, dress your salad with olive oil, freshly squeezed lemon juice, salt, and pepper. Give it a good toss, and your quinoa salad is ready to serve!
