Wholesome Hearty Chili – The Perfect Winter Comfort Food

Ingredients:

  • 1 lb lean ground beef
  • 1 large onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 green bell pepper, diced
  • 1 can (15 oz) of kidney beans, drained and rinsed
  • 1 can (15 oz) of pinto beans, drained and rinsed
  • 1 can (15 oz) of diced tomatoes
  • 2 cups of beef broth
  • 2 tablespoons of chili powder
  • 1 teaspoon of cumin
  • 1 teaspoon of oregano
  • Salt and pepper to taste
  • Optional toppings – shredded cheese, sour cream, green onions, chopped cilantro

Instructions:

  1. In a large pot over medium heat, brown the ground beef until no pink remains. Drain the excess fat.

  2. Add the onions, garlic, and bell pepper to the pot and sauté until the vegetables are softened (around 5 minutes).

  3. Add in the drained beans, diced tomatoes (with the juice), beef broth, chili powder, cumin, and oregano. Stir everything together and season with salt and pepper to taste.

  4. Allow the chili to simmer uncovered on low heat for about 45 minutes to 1 hour, or until the chili thickens and the flavors meld together.

  5. Serve hot with your choice of toppings. The chili also goes great with a side of cornbread or over a baked potato.
